Angel Hair Pasta with Beef and Vegetables

serves 4

 

1 lb. Certified Angus Beef™ sirloin tip steak, cut into 1/2 inch cubes

1 tsp. vegetable oil

2 cloves garlic, minced

1 (16oz.) package stir fry blend frozen vegetables, thawed and drained

1/2 cup grated Parmesan cheese

1/2 cup chopped parsley

1 (9 0z.) package refrigerated angel hair pasta

1/2 cup skim milk

 

1. On medium-sized skillet, brown beef and minced garlic  in oil over medium-high heat for about 2-3 minutes.  Add vegetables and stir-fry until vegetables are hot, about 3 minutes.

 

2. Mix Parmesan cheese and parsley.  Divide mixture into 2 equal parts.

 

3. Cook pasta according to package directions; drain.  Toss with 1/2 of cheese-parsley mixture and milk.

 

4. Divide pasta evenly among 4 plates.  Top with beef mixture.  Sprinkle with remaining cheese and parsley.  Serve immediately.
