Roast Beef with Penne Pasta

Serves 6

 

1 lb. Certified Angus Beef™ deli roast beef, thinly sliced

12 oz. penne pasta

2 Tbsp. olive oil

1 small garlic clove, minced

1 each yellow, green, and red pepper, cored, seeded and thinly sliced

1 small red onion, chopped

1 cup black  olives

1 tsp. red pepper, crushed

1/2 cup citrus salad dressing or to taste

 

1. Cook pasta according to package directions.

 

2. Cut roast beef into strips.

 

3. Saute garlic, peppers, and onions in olive oil until tender.

 

4. Combine roast beef strips with all ingredients and toss.

 

Serve warm or cold.
