Top Sirloin Stir-Fry

serves 4

 

1 1/2 lbs. Certifies Angus Beef™ top sirloin

Salt and pepper for seasoning

Oil for frying

20 snow peas

4 Tbsp. red pepper slivers

1 cup prepared stir-fry sauce

Bean thread noodles

 

Stir-Fry Sauce:

3 Tbsp. fish sauce

1 1/2 Tbsp. sweet and hot mustard

1/2 cup soy sauce

Juice of ˝ lime

1/3 cup sake

Salt and white pepper to taste

 

Garnish:

Enoki mushrooms

Cilantro leaves

 

1. For the sauce, combine all ingredients and mix well.  Season to taste with salt and white pepper.  Set aside.

 

2. For the beef, cut into strips and season with salt and pepper.  heat oil in wok and add meat.  Braise both sides of beef. Add snow peas, peppers, and 1 cup of sauce.  Simmer 2 minutes.

 

3. To serve, heat noodles and place on plate.  Attractively arrange meant and noodles and garnish with Enoki mushrooms and cilantro leaves.
